Seeing my sister- in- law's ripe july pumpkin made me crave these. They are pumpkin cookies with cream cheese frosting in the middle. Last night I made a couple dozen. I always have to share with the neighbors; otherwise I would eat them all. My shuffle does not have enough battery life for the jog it would take to burn it all off! Hint: They taste even better after they have sat in the fridge for a few hours.
